Start by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set it aside. Peel, core, and chop your apples then set aside.

Step 2: Prepare the Dry Ingredients

In a medium bowl, whisk together 3 cups of all-purpose flour (How to Measure Flour), 2 ¼ teaspoons of baking powder, 3/4 teaspoon of baking soda, 3/4 teaspoon of salt, 1 ½ teaspoons of ground cinnamon, and 3/4 teaspoon of ground nutmeg. Set this mixture aside.

Gently fold in about 2 cups of small-chopped Granny Smith apples into the batter. Be careful not overmix.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this aside.
  3. In a large mixing bowl use an electric hand mixer, or a stand mixer fitted with the paddle attachment, to cream together the softened butter and granulated sugar until it's light and fluffy. This should take a couple of minutes.
  4. Beat in the eggs one at a time, ensuring they are well incorporated after each addition. Mix in the vanilla extract.
  5. Gradually add a third of the dry ingredients to the wet ingredients and blend until just combined. Next, alternate with half of the sour cream and apple sauce, mix until just combined. Alternate, until you end with the remaining third of the dry ingredients. Mix until just combined.
  6. Gently fold in the chopped apples. Be careful not overmix.
  7. In a small bowl, combine brown sugar and cinnamon for the swirl.
  8. Spread half of the batter into your greased pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter. Add the remaining batter and sprinkle the rest of the cinnamon-sugar mixture on top. Use a knife or offset spatula to swirl the cinnamon-sugar through the cake batter.

  10. While the cake is baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  11. Once the cake is out of the oven, use a knife to poke holes in the top, and then drizzle the glaze over the warm cake. Allow the cake to cool completely before slicing and serving.
