Mix the Dry Ingredients:

  • In a medium bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt. Set it aside.

Mix the Wet Ingredients:

  • In a large mixing bowl, use an electric hand mixer to cream together 1 stick of softened unsalted butter and 1 ½ cups granulated sugar until light and fluffy. This usually takes about 3-4 minutes on medium-high speed.

  • Beat in 3 eggs, one at a time on LOW speed, until well combined.

  • Mix in 1/3 cup fresh lime juice, 4 Tablespoons tequila, and the zest of 2 limes until incorporated.

1: Creamed butter & sugar. 2: After adding the eggs. 3: After adding the wet & dry ingredients. 4: Batter poured into pan.

Combine Wet & Dry:

  • Gradually add the dry ingredients to the wet ingredients, alternating with 1 cup sour cream (room temperature). Remember to always start and end with the dry ingredients and have your mixer on LOW speed.

  • Mix until just combined, being careful not to overmix.

Pour & Bake:

  • Pour the batter into the prepared bundt pan, spreading it evenly.

  • Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

Make the Glaze:

  • While the cake is baking, prepare the glaze by whisking together 1 ½ cups powdered sugar, 2-3 Tablespoons fresh lime juice, and 1-2 Tablespoons Tequila until smooth.

Cool & Serve:

  • Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10-15 minutes. Carefully invert the bundt pan onto a wire rack to release the cake. Allow it to cool completely.

  • Once the cake has cooled, place it on a serving plate or cake stand. Drizzle the glaze over the top of the cake, allowing it to drip down the sides. Garnish with lime zest before serving!

How to Store

  • To keep your Margarita Cake fresh and flavorful, store it in an airtight container at room temperature for up to three days.

  • If you prefer a chilled treat, refrigerate the cake for up to a week. Just be sure to let it come to room temperature before serving to fully enjoy its delightful texture and flavor.

Shelf Life

Though it's unlikely this cake will last long once your friends and family catch wind of its deliciousness, you can expect it to stay fresh for up to a week when stored properly. However, we doubt it'll stick around for that long once you take the first bite!

Ingredient Substitutions & Variations

  • Tequila: For a non-alcoholic version, simply omit the tequila from the recipe. You'll still enjoy the refreshing lime flavor without the boozy kick.

  • Glaze: Get creative with the glaze by adding a splash of orange liqueur or swapping lime juice for lemon juice for a twist on the classic recipe.

  • Butter: If you're out of butter, you can substitute it with an equal amount of vegetable oil for a slightly different texture.

Tips & Tricks

  • Room Temperature Ingredients: To ensure a smooth and evenly textured cake, make sure your butter, eggs, and sour cream are at room temperature before adding them to the batter.

  • Proper Greasing: Don't skimp on greasing and flouring your bundt pan. This step ensures that your cake releases easily and maintains its beautiful shape. Try using my 3-ingredient Cake Pan Release Recipe!

  • Patience is Key: Allow the cake to cool completely before adding the glaze. This prevents the glaze from melting and ensures a picture-perfect presentation.
